Most Italian restaurants will have one or two days when they close - not necessarily Sunday. Italians love going out for long Sunday lunches, so it shouldn't be too hard to find places that are open, but you might need to book.

In late July of 06, my wife and I had a hard time finding an open restaurant in Palermo for lunch on a Sunday. By chance, we ended up at Carlo V on Piazza Bologni, which is just above the Quattro Canti if you are going away from the port. As with most places we found in Palermo, it was very good. For dinner that night, we ate at I Grilli (near Piazza San Domenico), which ended up being our favorite meal of the week.
