I know this is not an answer to your question, but my mom and I were searching the web for the Phillippe's Pickled Eggs recipe. We saw you had a post about a year ago saying that you have the recipe. It would be so great if you could give me the recipe please.

Enjoy! I have made this recipe for years and it is always a hit. It makes a nice presentation for a bridal or baby shower, too. Let me know how you like it!
3 cups apple cider vinegar
2 cups water
2 tsp sugar
2 tsp salt
1 tsp seasoned salt
4 Tbsp tobasco sauce
1 small can hot peppers
1 medium yellow onion, sliced thin
1 can sliced beets
1/4 cup dry sherry
2 or 3 bay leaves
2 dozen hard boiled eggs, shelled
Combine all ingredients in a large glass jar and let sit for 3-4 days refrigerated before serving.
We had dinner at Osteria Il Carcere one night last month. The food was OK, nothing special. From our particular table on the loft/balcony, however, we uniquely could observe the final staging area downstairs from which food was picked up by the servers, and what we observed was that all dishes coming from the kitchen were microwaved before being served.
If you're in San Gimignano on market day, Thursday (or even if you're not), and the weather is good, consider provisioning a picnic lunch and walking 5-10 minutes up to the little park and fortification called La Rocca at the very top of the hill, where the Consorzio di Vernaccia di San Gimignano has its "museum" and tasting room. Panini di porchetta and pecorino di stagionale from the market stalls, a half-bottle of Vernaccia, a little panforte to finish it off, what could be better? The view is spectacular, and there are some benches. The day we were there, a classical harp player (yes, the big concert instrument) was performing.
Just a few doors away from the Hotel Leon Bianco - I can't remember the name of the piazza but it's the one with an old well (I believe) in the middle - there's a small place called Osteria Carcere. Simple food but absolutely outstanding soups - I still dream about one with porcini and white beans I had there. Perfect for lunch. And afterward you should have gelato in the same piazza. Fantastic stuff.
