Thai noodle salad w/ peanut sauce recipe?

With the warmer weather, I have been craving a noodle salad with a nice peanut dressing, lots of veggies, and tofu or chicken. I think it is hard to find sauces that don't get clumpy on the noodles...any great recipes?

    Cooking Light has a great Tofu with Finger Licking Peanut Sauce. I loved it and it had just the right amount of heat.

      This was a great noodle recipe I made from the Chowhound site. There aren't any nuts in it, but you do add tofu.

          this is how i do it, if i choose to use peanut butter. i often just use tahini and skip the sesame seed toasting altogether.

          0.25 cup sesame seeds
          0.25 cup chunky peanut butter
          2 medium cloves garlic, minced
          1 tbsp minced ginger
          5 tbsp soy sauce
          2 tbsp rice vinegar
          1 tsp srirachi
          2 tbsp brown sugar

          toast sesame seeds. reserve 1 tablespoon seeds. in food processor, puree 3 tbsp sesame seeds, peanut butter, garlic, ginger, soy sauce, vinegar, srirachi, and sugar until smooth. with processor running, add hot water 1 tablespoon at time until sauce has consistency of heavy cream.

          works great!

            i get a better blend by heating the sauce slightly. sometimes hot black tea ( which i brew to a little smokiness) is sufficient to get a smooth blend. otherwise i use the microwave.
