NYT coffee and chili short ribs

I used the NYT recipe for short ribs that included a cup of brewed coffee. They ended up pretty good but the braising sauce wasnt really something you could reduce and mop up with bread and lets face it - thats the great thing about short ribs! I added a little molasses which helped the bitter taste and I suppose i could cut back on the coffe but wondering if anyone had a similar experience or had a better recipe. I have tried tomato based ones in the past which i didnt like so something in the same vein as this one would be great. Thanks!
