SAT Healthy Breakfast/Lunch

It seems most of the breakfast posts I could locate relate to tacos. I would consider trying tacos one time if someone could point me to a place which does not use lard or animal fat. However, what I really would like are recommendations on places for breakfast/lunch which serve great omelettes, eggs, salads, sandwiches, etc,. Since we will be at La Cantera, somewhere not downtown would be preferable. Thanks, all.

There's Gini's which is I believe on Blanco road and loop 410.They have healthy and vegetarian meals as well as meat dishes.They may also have a website.There is also Le Peep.Which has a place in the Sunset ridge Plaza,on North new Braufels,or is that the Twin Sisters bakery and cafe. Just type in the names in Google and see what you come up with.They may have websites.You might also want to type in Millie's.It's a chain,but there is one in your area.

      I'm Back!! There is no millie's here.I was thinking of Mimi's Cafe.
      It is located at 17315 Interstate 10 West,san Antonio(210)877-5792
      Le Peep.located at 19141 Stone Oak Parkway,Suite 127.
      Both are in your area ,especially Mimi's.

        Gini's is closed and Mimi's is a division of Bob Evans. No, thanks. Twin Sisters looks promising. Any other recommendations of places along those lines would be appreciated. Thanks.

          Forgot about Twin Sisters.I think they are on North New braunfels in the Sunset Ridge Shopping Center. Didn't know Gini's was closed.
          Had no idea that Mimi's was part of Bob Evans.Other than Twin Sisters
          and Le Peep,I don't know,though the paper had a review yesterday in the food section of a place called The Egg and I,which was the title of a book by Louis Bromfield.Unfortunately I didn't read the review,just saw the name.
