3 nights in San Diego for conference

I am going to San Diego this week for a conference. I need 3 "must eat" restaurants to go alone and/or with 1-3 colleagues. I will be staying at the Hyatt near the convention center. I don't mind walking/taking cab, etc. Price doesn't matter, but I need a few places to choose from. No mexican, no chinese please. Any/all recommendations would be helpful! Thanks.

this is the #1 request for San Diego. do a search for "convention center," "Gaslamp" or "Gaslight" (as the area is misnamed on the board) first. See the Moderators instructions for posting at the top of the board.
