Coconut Flour Baking Experiences?

I've just finished looking at a small paperback, Cooking w/ Coconut Flour by Bruce Fife, that claims that its 100% coconut flour(no other flours)recipes are excellent, sometimes better tasting than wheat flour recipes, that the cakes, muffins, etc are moist and tasty. Has anyone tried any of these recipes : Thoughts? Thanks much. Intriguing

  1. I have the same question - i purchased some coconut flour from an Indian store and am not sure what to do with it or how it might react in baking. Any comments??? Also, same question for Mango flour. Am curious for any comments.....
