rural Utah fine dining

Hi all,

Just moved (back) to Moab, and I will be traveling pretty regularly to national parks throughout Utah. What are places that shouldn't be missed?

I know about Cafe Diablo in Torrey, Hell's Backbone Grill in Boulder, and Center Cafe in Moab. Haven't tried the Desert Bistro.

Any other gems in unexpected places? Particularly for (or on the way to) Springdale, Monticello, Vernal, Tropic, and Kemmerer, WY. A broad range, I know! And if not fine dining, places worth stopping for a good burger or, gasp, a nice salad.

    In Heber City there's the Snake Creek Grill. I've been there only once, on the way to Homestead Crater, so I can't say whether it's always excellent or just was the night I was there.

      Also in Heber, Tarahumara (sp?) has great Mexican food (not tex mex)
