what to do w/ one eggplant, some frozen spinach, some gravy and mozzarella?
i have been looking up recipes, but they all call for too many ingredients, and it is just me, and am on a very tight budget. i wanted to roast the eggplant and make some kind of lasagna (i have the no boil noodles), but i'm afraid i don't have enough sauce, and don't feel like making more. also, i don't think there is a baking sheet where i am currently living, so what else could i roast the eggplant on, cuz there is no grill either...any suggestions?
Why don't you peel and cube the eggplant; salt it lightly and press it under a plate to get some of the water out; then sautee it in some olive oil and chopped garlic. Mix it with the sauce. Layer the noodles with the sauce, the spinach (thawed and squeeze in a tea towel to get the moisture out), the mozzarella and if you have some - ricotta mixed with an egg...bake and serve.
