Watermelon Feta salad?

Have a favorite version?

Am supposed to bring a salad to a dinner tomorrow night. It's summer in Arizona and I thought this might be a nice refreshing option(plus melons are on sale at the market across the street from my house).

Haven't really made one before....just curious what everyone's favorite combinations might be.

    In mine I put watermelon, feta, fresh basil, mint, thin sliced red onion, lime juice and honey and sometimes black olives (nice color contrast!)

      So - if you really want refreshing, try a tequila watermelon salad:

      Use most of a medium sized seedless watermelon, made into balls (enough to almost fill a 10 cup container). Add the juice of 1 and 1/2 limes, a little (like 2-3 tablespoons) of gold tequila, a couple of teaspoons of chopped fresh mint, and a dash of salt... the real secret -- after stirring, taste and adjust (more lime juice, tequila, whatever). Let sit for a couple of hours or overnight, the flavor gets better.

        The nigella recipe was outstanding. I had to work all day so my husband threw this together before we left for dinner tonight. He forgot to add the olive oil but other than that followed it as written....it was a BIG hit with everyone and perfect for a hot hot Arizona night.

          Watermelon, cucumber, crumbled feta and a little finely chopped mint has become my new summer favorite. I'll try the Nigella recipe next time, though.

            mmm...i love cucumbers. That sounds really good too. Will have to make that later this week!

          I make Nigella's recipe, but leave out the mint. You might want to try it that way first, and add the mint if you think it would taste good. I've had people request me to make it without mint.

            Thanks. I think I"ll try Nigella's recipe since everything in it is easily found in my kitchen. Looks good...hoping everyone loves it!

              If you're not partial to feta, there is this really good watermelon and ricotta salata salad on epicurious (just do a search). It calls for watermelon, ricotta salata cubes, pine nuts and basil. Actually, you could use the feta as a substitute, I suppose, though I kindof like the ricotta salata. Make sure you drain the watermelon a bit, b/c it will leach out quite a bit of water.

                I did a single plate presentation for dinner a few nights ago. I cut thin planks of watermelon about 2" sq and about 1/4" thick. Stacked alternating layers of watermelon and a creamy french feta. Tore small pieces of lemon basil on and around it and dressed with a balsamic/EVOO dressing with a touch of agave syrup for sweetness. It was spectacular to look at and tasted just as good. My wife was like WOW this taste amazing. Too bad no pictures

                      That is my favorite too. I just returned from the store with feta and watermelon to make some tonight. It may be Sunday before I get to it though. I forgot oil cured black olives. I prefer them to any other in the salad.

                        Would Nigella's recipe be horrible without the black olives? I really hate black olives (or any olives for that matter), but the rest of it sounds fabulous.

                          Sure. They add a nice contrast you if you hate them you hate them. Do you dislike olive oil too? Tonight I used Argan Oil, instead of olive oil in the salad. Argan oil is a very powerful cholesterol blocker. I use it frequently in salads, and should do more with it. It is not for cooking and is expensive. It has a pleasant olive oil nutty taste.

                            I love olive oil. It's just the plain olives that I have a problem with (and I have tried repeatedly to get over this--I just don't like them).

                              I make it all the time with just the watermelon and the feta (or goat cheese), some olive oil and S&P and we love it. I don't have anything against olives, its just that it was the first way I had it, so tend to like it that way best.

                                I understand. I totally despise salmon. I'll eat and enjoy lox , gravlax etc. i find a salmon steak or fillet totally gagilicious. Nasty nasty nasty! Farmed or wild. It is so not happening in my home.

                                  And while I simply cannot get a glass of milk down, I love sour cream, cheese, and cream sauces. Go figure.

                              It's totally fine without the olives. I don't think the olives add much at all. It is a refreshing crowd-pleaser.
