What to make with Pina Coladas?

Hello there!
I'm attending a Pot Luck dinner, and the host is planning on serving Pina Coladas. I'm at a loss as to what to make...any ideas?
I'd like to make a hearty appetizer, or a main course. Any suggestions would be much appreciated. Thanks!

      Love LaLa's coconut chicken strips idea. Serve them with mango salsa.

        I'm thinking some succulent pork satay with maybe pineapples cubes would be to-die-for. I'm sort of imaging this in my mind, but there has to be recipes galore out there. Something porky-fruity http://www.google.com/search?q=recipe...

          My fave (along the same lines as the other posts above) is Coconut Mango Chicken served in wonton cups...chicken satay might be nice too.
