What to make with Pina Coladas?

christineb Jun 12, 2008 02:21 PM

Hello there!
I'm attending a Pot Luck dinner, and the host is planning on serving Pina Coladas. I'm at a loss as to what to make...any ideas?
I'd like to make a hearty appetizer, or a main course. Any suggestions would be much appreciated. Thanks!

    Appetizer: Panko-crusted, deep-fried plantains.

My fave (along the same lines as the other posts above) is Coconut Mango Chicken served in wonton cups...chicken satay might be nice too.

In Julie Van Rosendaal's book "Grazing" but the recipe is also on her blog site: http://dinnerwithjulie.com/?s=curried... ...scroll down just below the scone recipe.

I'm thinking some succulent pork satay with maybe pineapples cubes would be to-die-for. I'm sort of imaging this in my mind, but there has to be recipes galore out there. Something porky-fruity http://www.google.com/search?q=recipe...

Love LaLa's coconut chicken strips idea. Serve them with mango salsa.

That's a great idea! I'll search epicurious for a recipe...
