Bäcos, anyone?

Today's LA Times spells Joseph Centeno's creation with an umlaut, as in ... b ä c o.

Can you please let us know if that's the correct spelling?

Philologically inclined chow communards will appreciate feedback from you ( or anyone else in the loop ).

        Years? I don't think so.
        I believe he wanted to wait to get the license before doing the tasting menu, so hopefully he'll get it soon.

      yeah, it does have the ".." over the "a" at least according to the lunch menu.

        I needed to be told, others may too, that bäcos rhymes with "tacos".

          Yup. Me too. First time I saw it in print, sans diacritic, I thought it had something to do with bacon bits :)
