Seasoned Dry Bread Crumbs -- Italian?
I'm about to make Ina Garten's chicken piccata for dinner and it calls for seasoned dry bread crumbs. Is that the same as Italian bread crumbs or is there something else out there. TIA.
That's a Iittle bit strange, as piccata is not breaded. Also, the flavor should be subtle- lemon, butter, olive oil, white wine, and capers. The tanginess of flavored breadvrums will definitely interfere with this. The chicken (or veal) is usually dredged lightly in flour, only. No egg.
In any case, I definitely recommend making your own seasoned crumbs (toss some basil, garlic, romano cheese, salt and black pepper in a food processor).
