roasting dried shrimp?
the great martin yan cooked up a delicious-looking sweet and spicy garlic shrimp on his program yesterday. his secret ingredient? roasted, then ground, dried shrimp -- oh, about a tablespoon (?) added to the fresh shrimp stir fry.
have i been missing something when i haven't roasted my dried shrimp for som tum (thai green papaya salad)?

Well not trying to avoid the question but the idea of roasting dried shrimp is done to increase the flavor of the dried shrimp. If you pan roast the dried shrimp prior to cooking a dish the flavor is released. In South Asia there is a dried shrimp mixture called Ma La Jon which adds a lot of flavor to Asian cooking.
The answer is yes, try dry roasting the dried shrimp and you will see. You will see the depth of the flavor and smell will be better.
