When I stopped by Han Ah Reum in Woodside this morning, the man who makes the tofu was handing out samples of a freshly-made ice-cold soybean soup. It was milky and very simply flavoured with a bit of salt and sesame oil - ultra-refreshing in the heat.

It's in big plastic soup containers in tofu section in the front for $4, right above a big box of crisp pale Korean cucumbers.

I couldn't get an explanation of what this soup is called (the label is in Korean), but it's fantastic for the summer. I don't know if it's for something special, or if they'll have it all summer long, but I hope so.

I believe that's the base soup for one of the Korean summer cold noodle dishes. The cucumbers go in the soup with the noodles, and often some ice.

Midang on 75th Broadway in Jackson Heights serves very good konggooksoo. I had it in the restaurant on Saturday and as takeout on Sunday - both times were satisfying. It'll probably be a summer staple for me.
