One of my favourites is peanut "salad" from Padma Laskshmi's Tangy, Tart, Hot & Sweet. Essentially it's raw peanuts boiled with bay leaf, drained and tossed with chili, diced tomato, lime juice, salt and lots of cilantro. I change the proportions to suit my taste. It doesn't sound like much but it's great.
I also like peanuts in stirfries and as a garnish for vietnamese dishes.
I've also heard of Senegalese peanut soup but haven't yet tried it myself.

Numbers 1, 2, 3 and 4 -- peanut butter, with a spoon, first dipped in strawberry preserves.
Then:
Out of the can -- current fave, from the Peanut Roaster. OMG.
On a salad, with honey mustard dressing.
In a bowl, with honey mustard dressing, hold the lettuce.
The butter again, on macaroni with cheese and sugar.
Peanut oil.
Nuts again, with chicken cutlets.
Butter, on ice cream, Trader Joe's, because it's so very creamy. If there's another way, I hope to find it out.

100 different ways. But right now it's over french vanilla ice cream with a little chocolate syrup. Love the salt/sweet flavor!
