Miso paste

Hi all. I was wondering how long miso paste will last in the fridge before it spoils. Thanks for your help!

I'm glad you asked this since I've been wondering it myself. My brother and sister-in-law, who lived in Japan for several years, said it didn't last that long. They must have really lost track of time since folks on here say the opposite. I hope my brother and SIL are wrong!

It will never go bad. A zillion years from now, cockroaches will be eating the miso we leave behind.

A while! It's a very salted product, and aged to begin with. I've had miso for a year in my fridge before.

Alot of the miso I buy tends to get a bit darker on top after a bit, but I just scrape it off. (tasty!)

As with any food though, my motto is "when in doubt, throw it out". If it looks furry or otherwise gnarly, give'r a toss.
