Sushi Grade Salmon and Tuna in DC?

Anyone aware of any locations in DC that carry high quality Sushi-Grade Salmon and Tuna in NW? I seem to remember a market on Wisconsin Ave?

I called Blacksalt this weekend and they informed me they had Salmon that they felt comfortable selling for Sushi?

Both Durama Japanese Market and Hinata Japanese Market in Bethesda I have been told carry sushi grade salmon and tuna but at $30/lb? Plus, would prefer not to drive to Bethesda.

Any thoughts on the SW Waterfront Market or other locations? Anyone have an experience ordering tuna and salmon for sushi online?

Also, what is the storage and lifespan of sushi purchased? Do I need to freeze?

  1. Here is one website I came across:

    1. Is there a Harris Teeter? Their weekly ads feature, about once a month, an excellent price on tuna medallions that they claim are sashimi-grade. Whether you will agree or not, I can't say - I like 'em, and I'm sure they have them at regular price other times.

On the other hand, I can't think of another reason on earth to pay the prices at Harris Teeter.

I was at the new Harris Teeter on Captiol Hill the other night and they had "Sashimi Grade" tuna, for what it is worth. I don't know about salmon, that's a little trickier.

I once had a chef at the sushi restaurant @ National Airport tell me that the best place to get it was the Maine Ave market, but to make sure to ask for sushi grade-it won't be sitting on ice out in the sun. It should come from the back.

A couple of years ago I lived near a Harris Teeter in VA and had bought their sushi/sashimi grade tuna (and possibly salmon) and it was perfectly fine.

Another option would of course ask the chef at your favorite/neighborhood sushi restaurant where they would suggest purchasing sush-grade fish.

      2. If Blacksalt has something i'd think it would be pretty good. Wegmans sometimes has very nice sushi grade tuna but thats a hike out to Dulles. I wouldn't touch the fish at SW market.

Anyone with anything more local in DC?

Todd Kliman did an in-depth article in Washingtonian magazine last year on this subject. He mentioned that the only local raw tuna dish he'd tried in a year of searching that was up to snuff was "an appetizer, called Fire and Ice, at the Inn at Little Washington, a Band-Aid-size portion paired with a cucumber sorbet. It costs $138 or $168—the prices of the inn’s prix fixe four-course menu—to get it."

This article was also included in The Best Food Writing of 2007 book. I just got done reading this article and found it fascinating.

        2. I recently got both sushi grade tuna and salmon at the Korean supermarket near Falls Church called H Mart if I am not mistaken. The fish was good, and decently priced. Lots of other interesting stuff there, too. Address is 10780 Lee Hwy, Fairfax, VA 22030
