I have also used the baked barley recipe, it works quite nicely.
Another recipe that I love is Mediterranean Eggplant and Barley Salad from Gourmet a few years ago. It is perfect for summer with zucchini and eggplant. I use hulled barley instead of pearl barley, and sometimes I add chickpeas.
Hey casey...I'm just starting out with barley, so I'm a novice...finally found hulled barley at Wild Oats (hulled barley is the only form of barley considered a "whole grain"--if it's pearled, it is not as fiber-rich, just in case anyone is wondering...heh) and I made this last night with a braised turkey thigh dish which is supposed to go over noodles but I wanted a healthier starch so I made this baked barley from Alton Brown:
It's very good! Came out fluffy but with a bit of a chew to it...I will probably look into putting the leftovers into a salad of some kind this week to take to work.
