I believe Chef Gerdy Rodriguez does and he is now at 1 Bleu at the Regent Hotel in Bal Harbour.
At some point, I will have a very detailed report about a "special menu" dinner we did this weekend at a Miami restaurant.

I forgot about Chef Toby Joseph who is at Cero at The St. Regis in Ft. Lauderdale. Expensive but good. It should be noted that my last meal was approximately 5 months ago.
