Toasting coconut - fumes

I was toasting some pre-shredded coconut in the oven and when I opened the door to check on it, I felt like I got hit by pepper spray. Eyes watery, plus a burning sensation in the sinus cavities. It lasted a few seconds then the pain went away and things resumed smelling like lovely coconut. I think I better hold my breath and close my eyes while leaning as far away from the oven as possible next time! Does anyone else get this reaction?

  1. Had the coconut been treated with sulfur dioxide?

      No. It's just dessicated coconut and sugar.
