Sticky buns recipe

I've made cinnamon rolls with a cream cheese frosting but never sticky buns. I'm considering Ultimate Sticky Buns from Epicurious. Anyone tried it or have any other recs? Thanks!

    The key to a good sticky bun is the pan glaze. Some sort of syrup or honey makes them much better. Epicurious uses corn syrup but I just melt butter in the pans over a really lower burner then stir the other ingredients in. Honey is my favorite but have also used golden syrup or maple.

      When I made the Pecan Sticky Buns, after inverting the buns onto a plate I couldn't bear to leave all that yummy pan glaze so I scraped it out of the pan. MISTAKE! Apparently scraping the caramel out of the pan results in crystalization and grainy glaze. Also, I used a glass pan and wasn't satisfied with the caramelization. Next time I'm going to use a metal pan - even if I have to buy one.

      I used the Pecan Sticky Buns recipe (it uses brioche dough) from Baking with Julia which is written by Dorie Greenspan. I figure with that much butter and sugar, it's hard to go wrong. Even though it was my first time with this receipe and I deveiated from the recipe proofing times, these got rave reviews.

        The sticky buns from Dorie Greenspan's "Baking from My Home to Yours" are the best I've ever had. I just couldn't get over how marvelous they were. I reported on them here


        when Greenspan's book was Cookbook of the Month.
