Bringing foie gras home from Paris? (moved from Kosher board)
I want to bring some kosher foie gras home from Paris. Should I buy it fresh from a butcher or buy it canned? What is the best kind to buy either way? If I buy it fresh, how do I pack it to make sure it stays fresh for the trip back to NY? Thanks!
my feeling is, that it's not worth the risk to try to bring in fresh. it is too expensive to risk it spoiling.
from what i have seen, the canned is not like the fresh though. it is a foie gras mousse. when i first served it, i tried opening both ends of the can and pushing it out, so that it stayed intact, but then when slicing it, it just didnt act right with me.
now, i use a piping bag to plate it and it makes for a much nicer spread
