Inspire Me - Sunday Spring dinner

I'm staying w/ friends tomorrow night and promised to cook them dinner. But I'm feeling terribly uninspired and can't seem to figure out what I want to cook. It doesn't look like great grilling weather, in fact the weatherman says humid and stormy, so I don't think a stew or heavy dish is what I want. I was thinking of a roast pork tenderloin? and salads? but i'm drawing a blank.

I'm hitting the farmer's market in the morning to stock up. Would love ideas or suggestions for something relaltively uncomplicated to make, not overly adventureous (her hubby is not a foodie), that utilizes the best of Spring produce. What would you do?

    how about risotto with leeks and asparagus or english peas served with a green salad with beets and blood oranges.

      The pork tenderloin sounds good, or maybe saucy ribs slow cooked in the oven or crock pot. ( Would leave you time to visit and they practically cook themselves) Then add a quick sauteed asparagus or a spinach salad with fresh strawberries and a light vinagrette. Risotto sounds good too.

        Roast spring lamb, mint sauce, redcurrant jelly (ok so shoot me I'm a Brit), roast potatoes, some spring greens and a thinnish gravy.
        Then a pie for dessert.

          as an Aussie this would be my choice too - except w/ Pavlova for dessert. But sadly, my hosts are not lamb eaters :(
