Spam pie recipe

homerunmama63 May 12, 2008 04:20 PM

Hope someone can help me with this.

Years ago, my mother had a recipe for an entree-style pie that had chunks of Spam, diced potatoes, some sort of creamy sauce that I believe had cheese in it, and a double crust made of pre-made pie crusts. It sounds strange, but it really was a very good pie, and I don't normally like Spam. It was almost the ultimate comfort food. I'm not sure, but I think my mother got it from some sort of regional cookbook that she has now lost or thrown away. There is nothing like it on the Spam website. If anyone has this recipe, or anything close, I would be so grateful.....my dad is waiting anxiously for a piece!

Just use a chicken pot pie recipe but with no salt added.

      1 double pie crust
      1 can Spam, cubed
1 cup partially cooked potaotes, cubed
      4 oz Velveeta, cubed
      8 oz Mozzarella cheese, cubed
      1/4 cup bell pepper, chopped
      1/4 onion, chopped
      3 tablespoons milk
      Salt, pepper

Mix all ingredients adding enough milk to keep the mixture moist. Pour into the pie crust and put second crust on top; slit. Bake at 350 degrees until browned.

Here's another recipe that you could perhaps tinker with....
