Lemon Bars from Cooks Illustrated...YUMMY!

Finally, I made lemon bars for the first time for Mother's Day today. Decided to use the recipe from Cooks Illustrated. When I took the crust out of the food processor I was very unsure of it, It resembled cornmeal and I wasn't sure that would bake properly but I followed the directions and pressed it into the bottom of the pan like they instructed and it came out great! The lemon curd filling was amazing and very fattening but good. I doubled the recipe so I needed 14 egg yolks and 4 extra eggs. I ate about 5 or 6 pieces this afternoon and now I am ready to explode! LOL. This is a keeper recipe and I am posting it in case anyone would like to try it. I used mostly meyer lemons. I also didn't add the salt, I don't like salt in baked goods. Richie

    broadening the topic to cook's illustrated recipes in general, their thin and crispy oatmeal cookies topped with sea salt are similarly wow-inducing.
