  1. In Park Slope, I've had good quiches at Colson Patisserie on 9th St & 6th Ave, as well as at Parco on 7th Ave (between 14th & 15th St.). There's also another patisserie on 9th St (between 5th & 6th Ave) that used to make a good quiche--it's been a couple of years and the name escapes me (Delices-something?...yellow sign & awning). They were briefly closed by the health department about a year or two ago (I believe because of a leak in their basement), and I've yet to go back since they re-opened.

I think both branches of Sweet Melissa (7th Ave near 1st St in the Slope, and Smith St. near Douglass in Cobble Hill) make them as well, although I've never tried them so can't vouch for how good they are.
