Lobster Cooking Time - need help ASAP!

I have been blessed with 2 four pound lobsters! I'm not sure how long to steam them - I'm thinking around 24 minutes. Does anyone have any other ideas? Thanks for the help.

  1. We think the same (~25 mins) but also think you should call a good fishmonger or lobster pound or even a resto that serves lobster. PLEASE report back, you lucky thing!!!!

    1. We always do them until they are a bright orange/red- then into ice cold water. Split and go from there.

      1. I usually boil my lobsters in water in a very large pot. Steaming lobster is supposed to be quicker, the premise being steam is hotter than water. The two general rules I always follow are:

        1. For two-three pounds and under, 10 minutes for the first pound, and three minutes for each additional pound.

        2. For Jumbo four pounds and over, 12 minutes for the first pound and 1 minute for each additional quarter pound.

        I usually err on the side of caution for the last pound and reduce the last pound to half, as I would prefer the lobster to be slightly undercooked and not dry and rubbery.

        1. I linked to a previous discussion, where I list the times recommended in my favorite lobster cookbook ("Lobster at Home" by Jasper White). They always come out perfect (and being from New England, we cook a LOT of lobsters!)

            Thank you all for your help. I ended up cooking them for about 25 minutes and they were perfect. Took care of my lobster fix for a long time. Rubee, I will print out your times so I have them when needed again.
