Made a batch of lentils for tostadas and have enough left for another meal or two. If I freeze them will they be okay?
In a word, yes.
I made some lentil soup last week and froze the leftover. I defrosted it yesterday and it was as good if not better than the original. The lentils were still intact and not mushy at all.
I do it all the time with many different kinds of lentils. Go for it :)
