I want to make a tomato sauce I had in Rome, all'amitriciana, and I think they used smoked pancetta as it had a real smoky flavour. Tonight I'll try double smoked bacon instead.
matricana is normally made with guancale, which is a sort of pancetta made from pig jowels (cheeks).
i knwo you can get guancaleh from schfflers at st lawerence market
