More Chemicals in my Food

Is there a place in the LA or OC area that sells any of the chemicals used in Molecular Gastronomy? Stuff like Methylcellulose, Sodium Alginate, Calcium Chloride, Citric Acid, Gellan, Xanthan Gum, etc.

I know you can get all of these things online and I've done so in the past. I'd prefer to find an actual store for impulse and inspiration. Sometimes I put together crazy dinner parties on short notice and can't wait two weeks to get Xanthan Gum shipped.

  1. I'd guess you would find some of it at Surfas. And you may try a pharmacy for the rest.

    1. I was just browsing the website from Froma on Melrose and noticed they have a full line of these products from El Bulli. Most of it seems to cost an arm and a leg. They also have special El Bulli dishes and such.

      1. I'm pretty sure xanthan gum from Bob's Red Mill is available at Whole Foods.

        1. Froma on Melrose carries Adria's line of foodstuffs.

          1. you can get xanthan gum at wild oats. citric acid is also known as sour salt and can be found in the kosher section of grocery stores.
