What goes with Chicken with Mango Chutney?

I'm having a family dinner party in a couple of weeks. Will be serving grilled chicken breast with a mango chutney (mango, lime, cilantro, scallion, avocado). I'll probably serve it atop garlic cilantro cous cous.

What else should I serve with this?

  1. Your mango mix sounds delicious! How about a green veg? You could drizzle some asparagus spears with oil, season with salt and pepper, and toss on the grill, or roast them at 450 degrees for 8 to 15 minutes (depending on thickness). Or you could sauté some baby spinach, or green beans, or sugar snap peas, and season either with minced ginger and garlic or some lemon juice and zest.

    1. Mmm sounds yummy! The asparagus idea sounds good too. You might make a salad with mixed spring greens, goat cheese, toasted (shelled) pumpkin seeds/pepitas, some sliced red peppers. For the dressing you could make a white wine vinegar and EVOO dressing seasoned with some cumin, sea salt, ground black pepper, and since you'll have some mango, slice off some around the seed and throw it in the cuisinart with your dressing - it will sweeten it up a bit and make it a thicker consistency. It's good with the goat cheese!
