for simpler:
- sour cream, or substitute yogurt or crema
- blue cheese of your choice, crumbled
- dash of lemon juice
- a few minced chives or your preferred allium

I like to add a little mayo for body, salt and freshly cracked black pepper. The dressing may require thinning with milk or buttermilk.

Easiest in my world is to make a simple, flavourful vinaigrette (olive oil, white balsamic or white wine vinegar, salt and pepper). Crumble blue cheese into salad, then toss with dressing. I like this much better than the more common creamy blue cheese dressing - real chunks of cheese, nice dressing - excellent.

8 oz blue cheese
1 cup of may
milk to thin 1/4 cup? depends on how thick or thin you like it
1/4 tsp white pepper
2 tsp Lea & Perrins
1 T Tabasco Sauce
Using a fork, coarsely mash the blue cheese, then add the milk and the mayo making it smooth. Add Kosher.Salt and white pepper
and then add the sauces. Thin it out if you need to with more milk. I usually reserve a little bit of blue cheese coarsley crumbled into the dressing afterward or to top the salad with.
