Recommendations for professional knife sharpening (Global)?
Hello CHers, this is a question for the GLOBAL knife users -- where do you get your knives sharpened? I'd like to get my trusty G-2 back to factory razor sharpness, but don't trust myself with using a whetstone on a $100 knife. I would really like to find somebody who is experienced with Global knives and their angles.
I recently have had two knives and a cleaver sharpened at Razor Sharp Cutlery, with satisfactory results. The knives came back looking good, with a nice edge.
My knives aren't Global, however, so you'll want to speak with them about your specific blades.

i don't have any familiarity with global knives but many san francisco chefs (and high end salon stylists) take their knives (and scissors) to columbus cutlery. it's a tiny family-owned shop in north beach, covered in business cards from the local chefs who use their knife sharpening. my family has been going there for decades.

We have a Global, and we get it (and all our other knives) done at Columbus Cutlery. Never had a problem, they really seem to know what they're doing.

I have 3 Global knives including the G-2. There's nothing unique about the angle - it's the same acute angle as most Asian knives. Any decent cutlery store that sharpens knives can handle them. I take mine to Razor Sharp Cutlery in the Tenderloin, right across the street from the culinary school.
You also don't need to spend $100 on a whetstone. Go to Kamei restaurant supply in Inner Richmond and get a 240grit and a 1000grit whetstone for like $25 each.

if you're near the Peninsula, the place to go is the Perfect Edge, in San Mateo. A lot of professionals seem to bring their knives there, for good reason. They do a great job. I had them sharpen a shun stainless santoku, as well as forschners and sabs, and they do a great job..

I've brought my Globals there for years.
They are also a great place to go talk knives before deciding on what to buy.
