Menu help please!

Casual cookout tomorrow. Thought I'd mildly theme it for cinco de mayo. Would love suggestions for additions and tips - and I can get to the grocery store again tomorrow.
I have a flank steak (thinking tex- mex marinade and would love suggestions), some chicken breasts, guac, homemade salsa, chips, tortillas, all kinds of beans, mangoes, cilantro, jalapenos, limes, eggplant and asparagus (thinking of grilling one or the other). Others are bringing fruit salad, brownies, and corn on the cob - the kids love them all!

I would especially love marinade ideas and maybe a bean salad idea or something to do as a side. Nothing fancy for this last minute thing! Of course any other ideas aceepted as well :) Thanks!

  1. Hey, it's Derby Day tomorrow. The 134th running of the Kentucky Derby will take place at 6:04pm. Why not have some mint juleps, mix up some Harry Bain sauce for the flank steak and chicken, and Derby Pie for dessert.

      forgot about that. not a bad idea either...

      i just already had the chips and salsa and guac and thought I could put them to good use!

        thanks. looks good too. if i don't do it this time (just because i was looking for more of a salad/side than a dish) i will definitely make a different time.

          in terms of a salad/side, how about: quinoa with black beans, corn, roasted peppers, red onion, cilantro & a little queso fresco too in a light citrus dressing?
