I've got two really great recommendations for you. The first is the Country Butcher in Kennett Square. Their prime meats and old-fashioned service attract people from miles around. It's a family-owned business that has been in Kennett forever (or so it seems). They'll cut, trim, bone, etc. according to your requests, and nothing is pre-packaged. Much of their meat comes from local farms. If you're anywhere in the area, check it out.
The other place I'd recommend is Wegman's in Downingtown. GREAT selection, very knowledgeable butchers, good quality, including dry-aged and prime beef.
