Today Tlaxcala is the smallest of the united mexican states. Leucadian didnt you get a cookbook about the state?
I am out that way occasionally for the sis but if any you easterners care to check it out - it be much appreciated.

I do indeed have a Conaculta cookbook called 'La Cocina familiar en el Estado de Tlaxcala'. You have a superior memory. It starts off with tamales de maiz verde, which is a chicken tamal with tomates verdes (tomatillos) in the masa. There are a couple of recipes using squash blossom (flor de calabaza). I haven't cooked from the book, but I could be tempted to try the resto when I'm in the neighborhood.
