Recipe for Acai Jelly?
You could make an Acai Jelly using the fruit juice:
3 1/2 cups Acai juice
1 package powdered pectin
2 tablespoons lemon or lime juice
5 cups sugar
Combine fruit juice, pectin and lemon juice in a large sauce pot. Bring to a boil over high heat. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard for 1 minute, stirring constantly. Remove from heat. Skim foam if necessary. Ladle hot jelly into hot, sterilized jars, leaving 1/4th inch headspace. Adjust two-piece caps. Process 5 minutes in a boiling water canner.
Yield: about 5 half-pints.

Well, I made the recipe above and it worked great. Used 3 of the 10-oz bottles of Acai juice. I now have 6 half-pints that I processed plus a little more that I put in the fridge. Tried it today and it tastes just like the juice. It's less firm than jellies you get in the store and jams you make from powdered pectin but I find the softness to be pleasant. Thanks again!
