Overdone roast - other uses?

I overcooked an eye round until it was just too gray - I ended up grinding it up and adding it to chili, was that bad? What would you do with it?

  1. good idea! Making open faced sandwiches with plenty of gravy works too!

    1. I think the chili idea was clever...I would have done super think slices and made French Dips or Cheesesteaks.

      1. Roast beef hash. Potatoes cure everything.

        1. I made a beef salad once in a case like this. Cut the beef into bite-sized chunks, add sliced celery, pepperoncini, red onion, some dried oregano, olive oil, and lots of vinegar. It was tasty enough to take my mind off mourning the loss of a nice rare roast. Your chili idea was not too shabby, though.

          1. low crock pot w/ bq sauce.
            low crock pot, w/ salsa.
            When tender, shred it. I'm just assuming it would re-tenderize enough to shred. I would think that it would.
