Overdone roast - other uses?

I overcooked an eye round until it was just too gray - I ended up grinding it up and adding it to chili, was that bad? What would you do with it?

      I think the chili idea was clever...I would have done super think slices and made French Dips or Cheesesteaks.

          I made a beef salad once in a case like this. Cut the beef into bite-sized chunks, add sliced celery, pepperoncini, red onion, some dried oregano, olive oil, and lots of vinegar. It was tasty enough to take my mind off mourning the loss of a nice rare roast. Your chili idea was not too shabby, though.

            low crock pot w/ bq sauce.
            low crock pot, w/ salsa.
            When tender, shred it. I'm just assuming it would re-tenderize enough to shred. I would think that it would.

              Make ropa vieja.

              Shred and top with some tomato, red wine sauce (or if lazy, some canned spaghetti sauce)

                make a beef stew, beef holds together so it doesn't seem to mind being cooked again.
