Dessert for birthday

My mom's birthday is coming up, so my sister and I want to make her a special dessert. It has to be fast, easy and nut-free. We usually can make something up, but we don't want to take any chances, so we have no idea what to do. We do want something that is like a cookie, so every one can have one of their own. Please send any ideas to us by June, and others can be used in the future. Thanks!

    I've been posting this recipe for two layer key lime pie a lot but it really is easy and delicious. It's for one pie but you can do individual ones easily.

      Hmmm...well - what flavors does she like? Chocolate? White chocolate? Fruit? What about individual Chocolate Lava Cakes? Those are easy and DElicious.

        Individual Strawberry Tiramisu.

        Strawberry Mixture
        1/4 cup strawberry jelly (no chunks!)
        1/3 cup sugar
        2 pints strawberries, washed, hulled & sliced
        1/4 cup Italian or domestic brandy, optional

        Mascarpone Filling
        1 1/2 cups heavy whipping cream
        1/3 cup sugar
        2 teaspoons vanilla extract
        1 pound mascarpone cheese, softened to room temperature
        1/2 pound savoiardi (imported Italian ladyfingers), domestic ladyfingers, or sliced sponge cake (you can get these at Trader Joes)

        For strawberries, combine jelly, brandy and sugar in a bowl with sliced strawberries. Set aside in the refrigerator for an hour to macerate.

        For the filling, whip cream with sugar and vanilla until soft peaks form. Fold cream into softened mascarpone.

        To assemble, place a layer of the savoiardi, ladyfingers or sponge cake slices in the bottom of a shallow 2-quart baking dish or gratin dish. They won’t cover the entire bottom, but you can break them to fit.

        Drizzle with half the strawberry mix. Spread with half the cheese filling, smooth over so you see none of the cookies breaking through.

        Repeat with remaining savoiardi, strawberries, and filling, spreading the top smooth, using a metal spatula.

        Cover with plastic wrap and refrigerate for at least 24 hours before serving.

        You can also make these in individual servings using any pretty wine goblets or bowls you like. I've done them in mismatched tea cups for a shower.

        Yield: 8 to 10 servings

          easy and so nice and light, and darn cute heh. I'm sure you could change it up and make chocolate or whatever flavor you'd like.

              Have you considered some fancy iced cupcakes instead of cookies? Just a thought!
