Grilled Cheese Fixin's

Am on the Eastside and with gas more expensive than wine, I'm not feeling inclined to travel too far afield. Passover is ending. There's a new panini maker and the photos of the Grilled Cheese Invitational has me slavering. Karoun Dairy and the Silverlake Cheese are good and natural choices for the queso. Can anyone else think of an interesting cheese source I may have overlooked? I am however a bit stymied on finding a good variety of really delicious sliced panini maker friendly bread and really prefer not to venture west of La Brea although Glendale or Pasadena would work. And if anyone has any other ideas of neat thingies available locally to gild the lily of good bread and cheese and a disgraceful amount of butter, I am all, stomach.

First thing that popped into my mind was something like Clementine's recent pimento cheese panini, with stuff from Jon's or your local farmer's market: jarred roasted red peppers or fresh peppers roasted at home, a bit of roasted jalapeno, something tangy&creamy like Bulgarian or French feta mixed with something cheddar-like. i wonder how melty Armenian string cheese is...
