Cheese affineur with some time on their hands

Would love to find a cheese shop in Paris who would entertain our questions for a while (aging conditions, aging process, etc.) in English plus bits of French.
We will probably just pop into one or more but if someone knows of a quieter shop where the proprietor is especially friendly, forthcoming, that would be great.

  1. I would try Alleosse: http://www.alleosse.com/index.php?idL...
    They're one of the very few cheese "affineurs" in Paris, they have their own cellars where they age the cheeses themselves. They're friendly but the store in always busy. If you contact them ahead of time, maybe they can arrange something.

    1. Cantin always has time -- but it's mostly a question of when you go. Middle of the afternoon on a weekday, they usually have time on their hand. Saturday morning: not a minute.

        Thank you for the info.
        I actually had emailed Cantin yesterday and they graciously offered their time next Tuesday.
        Look forward to the chance to learn a bit more on this subject.

          Oh, that's great. Have fun chez Cantin. It's a cheese heaven.

      2. Another option would be to enjoy a small group (6) or private tour called "Markets of Paris" offered by Context Travel. The food docent takes you on a walking tour through farmers markets which exposes you to herbs, spices, cheeses & many other foods.
