Arroz con Pollo in a cast iron dutch oven

I would like to cook Arroz con pollo by first cooking a whole roaster chicken in my dutch oven, shredding it and then putting in the rice. This dutch oven is not enamel coated. Should I worry about the small amount of tomatoes and lime juice in the cast iron? Would I be better off just leaving them out? I know I have had arroz con pollo straight from cast iron at restaurants.

  1. It should be fine, especially if the pot has a well developed seasoning (a year or more?).
