      <content>They're used in stews to flavor the dish. You dispose of them, sorta like a bay leaf, after you're done cooking. I guess you could eat them, but they aren't very tasty. My favorite Persian dish is Gormeh Sabzi, and I like it extra tart, so I use lemon/lime juice as well as the dried limes. 

Any Persian market will have them, they're a staple in our cuisine. </content>
