bacon infused bourbon

i heard about this recipe on the radio and am waiting for my bourbon to infuse. i hope it works out.

How long can you store the Bourbon?

after trying one last night, i can see where it's a one drink drink, but it was fun...

i think a late brunch or BBQ would be good with it.

the reverse sounds more interesting to me, bacon marinated/cooked/caramelized in bourbon.

Been there, done that, boring to me. I'm friends with the folks at PDT and I heard about it from them when they were playing with it, and tried "fat washing" with bacon myself. It was ok, but not my cup of tea. PDT's is made with bentons bacon. I personally don't like bentons because it is all hickory smoke, no bacon flavor. So I didn't like the result.Others did at PDT but no one seemed to like it enough to order a second one.

Gosh, maybe I'm an anomaly. I love the smoky flavor that the bacon imparts and have probably had the Benton's Old Fashioned 5-10 times. A similar vegetarian option is at Tailor's, where the Waylon uses cola that has been smoked with bourbon.

I just had the Benton's old fashioned twice this weekend. I thought it was great, although the bacon flavor didn't really come through, the biggest flavor I tasted was the maple syrup. the waitress mentioned that some infusions come out much stronger than others and the one I had must've been one of the weaker batches.
