        <content>I bought a skinless turkey breast half, thinking roast turkey. By the time I got home I realized that no way could I roast that thing naked. Should I just slice it up and make cutlets or scallopini, or is there some way I could roast it covered with bacon or something? I really want the taste of roast turkey, but obviously not a dried up hunk of blech. (Turkey is rarely available where I live except around the Christmas holidays, which is why I lost all sense of reason when I saw this). Thanks, Chowhounds. </content>

      <content>I rub the turkey breast with herbs, salt, pepper, and plain yogurt. If you don't worry about calories, substitute butter for the yogurt. Wonderful way to roast a turkey breast without skin. Doesn't dry out at all, and makes a nice crispy "skin."</content>

      <content>Oh, Thank you! I will do the butter, even though I should worry about the calories. I am delighted to know I can do this without it drying out. </content>
