Need Advice on Finding a Sausage-Making Class

Can anyone offer advice on findng a class on making sausage? It could be private or at a school (ICE, ICE, baby).

  1. My husband took the sausage making workshop at the New School a while back. I think they still offer it. He thought it was very good, though not quite up to the level of the ICE recreational courses.

      Thanks! It seems like they're not offering that class currently, but they may be able to put me in touch with the guy who teaches it.

      Also it looks like Fleishers (http://www.grassfedmeat.net/) has a class in their upstairs "salon".

    2. I'm not sure about classes, but there are a couple great books out there. Michael Ruhlman's Charcuterie has an excellent chapter on sausage-making (including diagrams, recipes, detailed instructions, etc); I have one other called Home Sasuage Making (not sure of the author) that has decent recipes but very good sausage stuffing instructions. Also I know some people love Bruce Aidells's books.

      1. The FCI does a course on charcuterie which includes sausage.

          The FCI thing looks great, but it's tipping the scales @ $750!!!
