If you want to stay on the strip, there is a beer pub in the Monte Carlo. Only walked by and looked through the window so I can't speak for the food.
And a few years ago my cousin took me to a place in New York New York where we had an order of sliders that hit the spot. Believe it was ESPN sports bar. ??
Also in NY,NY is Nine Fine Irishmen - Irish Pub with outdoor dining & view of the Strip.Gordon Biersch (brewpub) is near Paradise & Flamingo. Their menu is pretty extensive and the beers are good IMO.

If you are looking for a fun and crazy place to eat you should most definitely try Dick's Last Resort in the Excalibur . Be aware that they do have this place in a couple of other cities. Overall it has good bar food and is definitely a break from the typical high end restaurant. Its about as casual as it gets. It seems like the place you are looking for to me!
check out the website for more details: http://www.dickslastresort.com/
By the way I will warn you that you should not go here expecting it to be your normal resturant experiance. It's far from that. For example some things that happen there are; Napkin wars between tables, and waiters that give you ridiculous paper hats to wear.

re: katie_ladie
about the only GOOD thing at Dick's is the beer!!! I have heard bad things about their food......I would try nine fine irishmen over at NYNY across the street. nothing like a good irish bar and fine irish women and good food too.:)
oh, and yardhouse pub over at Town Square has been getting quite the crowd lately.:)

Timber's bar & grill has really good food & above average breakfast menu IMHO... lots of locations off the strip too.

I always thought the PT's establishments had good food ( PT's, PT's Gold, Sierra Gold, etc. ). I lived up in Summerlin and had late night eats at PT's Gold at least once a week.
Outside Inn also has some decent eats late night. Their BBQ pizza is tasty as well as the Walleye Fish 'n' Chips.
For a change of pace try Ichiza or Harbor Palace Seafood - both in China Town ( Spring Mountain ) for some great Asian eats.
