Pork & Stilton Meat Pie [from UK/Ireland]

Does anybody have a recipe for Pork & Stilton Pie? Or would you recommend another pie using Stilton? I love strong flavors and I love pork (if it's cooked right). Open to any recipes and/or suggestions. thx

    I *love* pork pies! I'd grab a basic Melton Mowbray pork pie recipe, and add some good stilton to the meat mixture. Here's what a pie (at least the little personal-sized ones) looks like:

      This works well (recipe a bit vague I'm afraid, but I'm guessing that you're not a beginner):

      Make a nice home cooked beefsteak pie filling, 7 oz of 1 inch cubed braising steak per head, browned, onions, maybe some mushrooms, about 2 hours gentle cooking giving a thick-ish gravy.

      Use ready made flaky pastry to construct a pie in a dish (pastry under and over filling).

      Before putting the lid on, slice/crumble Stilton over the filling. Seal on lid, make a steam hole, glaze and bake till golden brown. Stilton melts beautifully into gravy.

      Luckily it's only 4,000 calories and 50g fat per serving!

        The closest I could find was lamb and stilton, but it could easily be adjusted.
