Who is your favorite single restaurant chef?
By single restaurant what I mean is a chef that you will almost always find in the kitchen unless its their day off. So obviously I'm not talking about Batali or Boulud here. Looking for chefs who work their craft on a daily basis and create wonderful food.

It was just announced that Scott Bryan is taking over the kitchen a Lever House. I, too, was a fan of his at Veritas and look forward to his return to the NYC dining scene.
My favorite NYC chef is, without a doubt, Daniel Humm. No surprise to regulars here who know that I adore Eleven Madison Park and Chef Humm's extraordinary cuisine.
